Today I tried something new! I am meal prepping. I am trying meal prepping because I live a very hectic life. As does everyone else. From school to work, I do not have time to breath. I go straight from school to work or work allll day. Which means, I have to pack breakfast, lunch, and dinner. Also, I am not the healthiest person in the world. I definitely eat fast food at least once during the week. There is only one thing that can solve all of my problems. TIME TO MEAL PREP
Ingredients-
- 1- red Onion
- 1- medium zucchini
- 1- cup of chopped grape tomatoes
- 1.5- heads of broccoli
- handful of asparagus (honestly not really sure)
- 2- boneless chicken breasts
- 1 cup of rice
- olive oil
- italian seasoning
Cooking-
Preheat oven to 450
1.) Cut up all of your veggies and chicken into bite size pieces

2.) Place veggies in a cute arrangement on sheet pan. π Then, drizzle with olive oil and seasoning of choice.

3.) In a medium sized pot bring 1 cup of rice with 2 cups of water to a boil. Once rice has came to boil, simmer and cover for 20 minutes.

4.) Place sheet of veggies and chicken in oven. Bake for 20 minutes or until chicken is cooked through.
This will provide me with five dinners this week. I also made veggie pasta for my lunch this week. I added a picture of the pasta I bought.
